The "Basic Three" from a long-established knife manufacturer, cherished for generations. Tsubasa Co., Ltd., founded in 1948 in Sanjo City, Niigata Prefecture, a leading metalworking and hardware production area in Japan, is a long-established knife manufacturer that utilizes traditional blacksmithing techniques to produce a wide range of blades for both household and professional use.

The company's signature product is the "Tadafusa Knife Studio" series, which was launched in 2012 in collaboration with product designer Fumie Shibata. This series simplified the selection of specialized and often confusing knives into a straightforward lineup of "Basic Three" (santoku, petty, and bread knife) and "Next One" knives chosen according to one's cooking skill, earning widespread acclaim.
The bread knife, in particular, is an innovative product that allows for beautiful, crumb-free slicing by having serrations only at the tip, and can even be sharpened at home.

In terms of functionality, the blades feature a three-layer structure with "SLD steel" (known for its sharpness and rust resistance) sandwiched between stainless steel. The handles use patented "antibacterial carbonized wood," which retains the warmth of natural wood while achieving high hygiene by preventing bacterial growth. Furthermore, the brand offers a sharpening service where the product packaging can be used as a "return box" to the factory, demonstrating its commitment to the modern lifestyle of "cherishing and using one tool for a long time." This commitment is a significant appeal of the brand.

A small, versatile knife that excels at intricate tasks and you'll want to pick up every day.

Effortless thin slicing. Even potato chamfering is easy. Excellent sharpness.

This is a small knife, typically called a "petty" knife.

Its compact design with a blade length of approximately 12.5cm makes it highly maneuverable and easy to handle. It's convenient for quickly cutting small amounts of ingredients like fruits such as apples, small vegetables, or items for breakfast or lunch boxes.

Easy to manipulate in hand, it's also useful for intricate tasks such as peeling, coring, chamfering, and decorative cutting. It can reach areas that are difficult to access with larger knives, allowing for precise finishing along the contours of ingredients.

This unexpectedly frequently used knife can handle everything from simple prep work to delicate tasks.

A complete three-layer structure with SLD steel sandwiched between stainless steel, supporting its sharp edge.

The blade features a complete three-layer structure with SLD steel sandwiched between stainless steel.

The blade features a complete three-layer structure combining stainless steel and SLD steel.

It is constructed with SLD steel, which produces a sharp edge, as the core material, sandwiched between stainless steel on the outside.

Made from a special alloy steel that is both hard and tough, it maintains a sharp edge well, achieving a balanced design that is easy to handle as an everyday tool.

The straight blade can be re-sharpened, allowing you to maintain its sharpness and enjoy it for a long time.
*After use, wipe off moisture thoroughly and store in a suitable environment.

Easy-to-use size

Antibacterial carbonized wood handle, born from Tadafusa's patented technology (Patent No. 4029427).

About [Antibacterial Carbonized Wood]

Uses antibacterial carbonized wood born from patented technology. (Patent No. 4029427)

This is wood that has been smoked in a furnace to a state just before carbonization. It contains almost no moisture or nutrients that bacteria can use for growth when they attach to the wood, preventing their proliferation and causing them to die.

Since the wood is smoked, it has a unique scent, but it is not artificial or chemical fragrance.

Comes with a decorative box, making it suitable for gifts. Can also be used as a mailing box for the knife sharpening service.

The total length is approximately 23cm, and the blade length is approximately 12.5cm.

It is easy to handle even when kitchen workspace is limited, and its size makes it convenient for cutting fruits and small vegetables. The maximum circumference of the handle is approximately 6.5cm, and the slender handle is designed to fit comfortably in the hand.

The rounded handle fits well in the hand, and the natural texture of the wood gives it a warm, tool-like feel. The Tadafusa logo is engraved on the blade. Simple yet beautiful as a tool, it's an attractive feature.

Since it comes in a dedicated paper box, it's perfect not only for personal use but also as a gift for cooking enthusiasts for occasions like wedding anniversaries, new home celebrations, moving, or birthdays.

The box can also be used to mail the knife for sharpening services, so it's a good idea to keep it.

Precautions Before Purchase and During Use

While we strive to maintain stock, please note that production and delivery may take approximately 7 to 10 days if an item is out of stock. Should there be a longer delay, we will notify you of the new delivery date. If you have any concerns about stock status or delivery times, please do not hesitate to contact us.

"Tadafusa Knife Studio" knives, while offering a sharper edge compared to all-stainless steel knives, require a bit more attention in daily care. As the cutting edge uses steel (SLD steel), rust may occur depending on care and storage environment. Rust can even develop overnight depending on care and storage conditions. Please enjoy the pleasant sharpness along with the maintenance and resharpening process.

After use, thoroughly wash off all dirt from the knife with hot water, wipe off moisture completely, and store it in a safe place.

Especially when cutting highly acidic foods with high salt content, such as pickles or lemons, thoroughly wash off any dirt.

Do not place in a dishwasher, dish dryer, microwave oven, or oven. This may cause damage.

Even sharp blades gradually lose their edge with use. Sharpen your knife with a whetstone at least once every 3 months. If you are not comfortable sharpening, please entrust it to the workshop.

For detailed handling instructions, please refer to the instruction manual included with the product.
