The "Hocho Kobo Tadafusa" series, launched in 2012 with product designer Fumie Shibata, is synonymous with the company. By narrowing down the specialized and difficult-to-choose knives to a simple lineup of "basic three knives (santoku, petty, and bread knife)" and "the next knife" to be chosen according to one's cooking skill, it has garnered much support.
In particular, the bread knife is an innovative product that allows beautiful slicing without producing crumbs by having serrations only at the tip, and can also be resharpened at home.
In terms of functionality, the blade features a three-layer structure that sandwiches "SLD steel," which combines sharpness and rust resistance, with stainless steel. The handle uses "antibacterial carbonized wood," a patented technology, achieving high hygiene by preventing bacterial growth while retaining the warmth of natural wood. This is wood that has been smoked in a furnace until it is just before becoming charcoal. When bacteria adhere to the wood, there is almost no moisture or nutrients for them to feed on, preventing bacterial growth and causing them to die.
Since the wood is smoked, it has a unique aroma, but it is not an artificial or chemical fragrance.

Compared to all-stainless steel knives, "Hocho Kobo Tadafusa" knives offer superior sharpness, but require a little more attention in daily care. Since the cutting edge uses steel (SLD steel), rust may occur depending on care and storage conditions. Rust can even form overnight depending on care and storage. Please enjoy the pleasant sharpness along with the care and resharpening process.
After use, thoroughly wash off all dirt from the knife with hot water, wipe off moisture completely, and store it in a safe place.
Especially when cutting salty or acidic foods such as pickles or lemons, wash off dirt thoroughly.
Do not put in dishwashers, dish dryers, microwave ovens, ovens, etc. This may cause damage.
Even a sharp blade will gradually lose its sharpness with use. Sharpen it with a whetstone at least once every 3 months. If you are not good at sharpening, please leave it to the workshop.
