"Tadafusa," founded in 1948 in Sanjo City, Niigata Prefecture, is a long-established knife manufacturer that handles a wide range of blades for both home and professional use, inheriting traditional blacksmithing techniques.

The company's flagship product is the "Hocho Kobo Tadafusa" series, which was created in 2012 in collaboration with product designer Fumie Shibata. Knives, which were once specialized and difficult to choose, have been reorganized into a simple lineup of "three basic knives (santoku, petty, and bread knife)" essential for daily cooking, and "the next knife" to choose according to your needs. This series has gained wide support as a tool that combines ease of use with a beautiful appearance.

And to use a good knife for a long time, daily maintenance is essential. By sharpening your favorite knife yourself when you feel its sharpness has slightly deteriorated, you can continue to use it comfortably. Precautions before purchasing and during use

You can use a medium-grit sharpening stone for daily maintenance. In cases of significant damage such as chipping, a coarse-grit sharpening stone may be necessary.

When sharpening a knife in the kitchen, etc., please use it on a stable surface so that the sharpening stone does not move. If necessary, place a damp cloth underneath.

Please keep the surface of the sharpening stone as flat as possible. If unevenness occurs with repeated use, it will be necessary to flatten it using a "dressing stone" or similar tool.

Before use, immerse the sharpening stone in water for about 20 minutes until no more bubbles appear.

Do not place in a dishwasher, dish dryer, microwave oven, or oven. This may cause damage.

Knives gradually lose their sharpness with continued use. To maintain pleasant sharpness, we recommend regular maintenance. If you find it difficult to sharpen yourself, a sharpening service at our workshop is also available.
