The "Hocho Kobo Tadafusa" series, born in 2012 with product designer Fumie Shibata, is synonymous with the company. It narrowed down the specialized and often difficult-to-choose knives into a simple lineup of "The 3 Essentials (Santoku, Petty, Bread Knife)" and "The Next One," to be chosen based on cooking skill, gaining wide support.
The bread knife, in particular, is an innovative product that allows for clean cuts without producing crumbs, thanks to serrations only at the tip, and can even be sharpened at home.
In terms of functionality, it features a three-layer blade structure with "SLD steel" sandwiched between stainless steel, achieving both sharp cutting performance and rust resistance. The handle uses patented "antibacterial carbonized wood," which maintains the warmth of natural wood while offering high hygiene by preventing bacterial growth. This is wood that has been smoked in a furnace to a state just before charring. When bacteria adhere to this wood, there is almost no moisture or nutrients to feed them, preventing their growth and causing them to die.
Since the wood is smoked, it has a unique scent, but it is not artificial or chemical fragrance.

Compared to all-stainless steel knives, Hocho Kobo Tadafusa knives offer superior sharpness, but require a little more care in daily maintenance. Since the cutting edge uses steel (SLD steel), rust may occur depending on the care and storage environment. Rust can occur even overnight, depending on the care and storage environment. After use, thoroughly wash off all dirt from the knife with hot water, wipe off all moisture completely, and store it in a safe place.
If you cut foods with high salt or acidity, such as pickles or lemons, be sure to wash off the dirt thoroughly.
Do not put it in a dishwasher, dish dryer, microwave, or oven. This may cause damage.
Even a sharp blade will gradually dull with each use. Sharpen it with a whetstone at least once every three months. If you are not confident in sharpening, please leave it to the workshop.
